Our Story

Our family has been working on the land for over four generations. Sean started working on the farm at the age of four helping his parents, Michael and Mollie.

Fast forward 35 odd years later, Sean and Deirdre opened a new chapter for their little farm in the hills of Cratloe in County Clare, a little hobby began to churn into something special.

As this was totally new terrain for, Sean and Deirdre they painstakingly pored over every aspect of the cheese crafting process, travelling to the Netherlands, England and France to learn from the best in the world in order to bring their individuality and passion to their own quality cheese.

Proud of their flock of sheep and acutely-aware of the overly-processed nature of so much cheese out there on the market. Together, they aimed to formulate and bring to market a cheese made with supreme diligence and care, and crucially a tasty, healthy creation that they’d be proud to serve their own children.

Food Chain

“If you don’t have good milk you won’t have good cheese”

This is something we are acutely believe in. Here in Ireland we are very lucky to have lush fields which sheep graze to produce some of the creamiest milk in the world.

Quality

No cheese is left unturned. Every batch of cheese is tested while crafting, and tasted during the maturing process to ensure that no cheese leaves Cratloe without having reached its full-bodied, intricate blend of tastes.
